So eating 5-6 meals of only lean protein and veggies, will that be enough calories? veggies aren't that much, and one chicken breast is only 140 calories.

Carb cycling works. Just avoid fruit. get carbs from starches (rice, whole grain bread sweet potato etc) and vegitables only.
