I find Yuyuko or Utsuho/Byakuren harder on Normal. (you mentioned Scarlet Shoot)
Lunatic is another story (Young Demon Lord, Scarlet Meister/Gensokyo...)
Btw, the blue/red knifes nonspell is there to catch you off-guard if you go to the PoC. Old trick.
