Indian Style Basmati Rice,

INGREDIENTS:

Rice:

* 1 cup basmati rice with 2 cups of water
* 1 teaspoon salt
* a little turmeric
* 1½ teaspoon ginger
* 1 tablespoon olive oil

Vegetable:

* ¼ cup olive oil
* Onion
* Garlic
* Mustard seeds
* Cumin seeds
* Ginger
* Cayenne pepper
* ¼ teaspoon (or any other pepper)
* Eggplants
* Tomatoes
* Spinach (or any other greens)
* Salt
* Turmeric
* Chickpeas (or tofu)
* Cane sugar
* 1½ teaspoon lemon juice
* Fresh herbs (cilantro, basil, parsley)
