This is a definite hell yes. Not only have I seen Skindred live twice, I now get to play their song in Rock Band! This is awesome!

Charting critique: Way too many 3 note chords. None of them make any real logical sense.

Actually, they all make considerable sense; there are very distinct tonal differences between the single note strums making up the verses, the basic two-note chords in the pre-verses, and the three-note chords in the choruses. You even say it yourself; they're supposed to be for the more melodic chords, which is what Mikey is playing in the choruses as compared to elsewhere in the song.
Trust me, we thought about it long and hard, and felt that it's appropriate for this song. :)

With that being said, I will admit it may be hard to pick out the tone differences based off of a YouTube preview. Hopefully when you experience it in-game through a rockin' sound system, you'll see why we went the way we did!
