  • My off the cuff comments about coconut and yoghurt being a marriage of North and South India is not to say they don't eat yoghurt in South India but that coconut is a base used commonly in South India in many curries whereas in the north it is not; youghurt is, so therefore it is a dish using a large amount of both, except in the "version" that has no yoghurt. My Malayalam friends also tell me that many variations of some dishes exist in Kerela alone; even between the religions and regions.

  • The one thing really missing from the original recipe I followed here was the author omitting final seasoning (or tarka) of curry leaves and mustard seeds toasted in hot oil and poured over the finished dish. It is very yummy. This dish can also be very saucy and using home made yoghurt would produce this effect versus the thick commercial yoghurt I used and is more common here. Add water to thin. If you are in the tropics you would also have fresh grated coconut available versus dessicated.

  • The wonderful thing about many cuisines is the regional variations. These can also be a source of disagreement. This Avial recipe was from a Singapore source based on a Malayalee recipe and did say use any vegetables and did mention cabbage although there are more typical vegies used more commonly. I have a Kerelan Hindu recipe with tamarind and turmeric but I also have three others from Indian sources with yoghurt and turmeric so variations exist. Check my next post to continue

  • Also, while this dish is vegetarian, it is not vegan as you say. Although it looks fantastic, so I might try a soy yogurt substitute but will probably also try the curry leaves/mustard, too.

  • This may be a good recipe but this is not an avial recipe, you need to get your facts right if you are telling the world about it. Never use cabbage or cauliflower in avial. Certainly it is not a marriage of North & South Indian cuisines and yogurt is used with every meal in south India. If you use turmeric, you don't use yogurt, you use tamarind.. Avial consists of inch sized veggies boiled,coconut ground with cumin and chiles, topped with a crackle of mustard and curry leaves in coconut oil.

  • Hi Steve, where is the curry leave in this? traditionally coconut ,cumin ,green chilly and curry leaves are grinded together and added to the vegetables and then finally it is finished with the yogurt.
