when using a ceramic or diamond honer, you have to remember that they take metal off. thats why white ceramic steels get black on them. so when you put a knife to the stone at 18 degrees, then using a ceramic or diamond hone at 20 degrees, since 20 is a wider angle it takes that angle, and whats left of the 18 degrees becomes back bevel. and kitchen knives should be sharpened at 15 degrees.
