Those are not triplets. You're playing 16th notes in groupings of 3.

Triplets are counted (depends on preference)- 1+a 2+a 3+a 4+a but they aren't gallops. It's evenly spready

You had it right in the first explanation. The second explanation and what you played are 3s, not triplets.
