My money says she's playing along with full self-awareness. She probably had to deal with people assuming she's dumb all her life, just because she's blond and good-looking (well, I kinda think so anyway.) and learned how to play it up--her timing with the punch line was obviously planned, and the audience and host is laughing so hard because they totally get the joke...they know she's satirizing her own stereotype and like the finesse she does it with. If you don't get you're dumber than her.
