Food can be contaminated, naturally or by human activity, at any stage of the food chain. The level of contamination can vary widely and may not necessarily be a safety concern for consumers. An EFSA toxicologist explains why chemicals are present in food and how scientists try to assess their safety, while recognising the health benefits for the consumer.
