Copper is a noble metal, while aluminum is very reactive. But it's only reactive when the oxide layer is removed. Copper sulfate does not remove this layer, so it hardly reacts at all. Copper chloride happens to remove it effectively, resulting in an impressive reaction rate. The solution boils almost immediately on contact, yielding powdered copper.
