a trick I do instead of the bowl is put the meat in gallon bags and squish the air out,, than I just flip the bags every couple hours.

Tried it, but added a curing agent to it. It tasted great. But I think it would too expensive to use this method on a regular basis. Ignore the comments from others whose self confidence is so low that they must pick at someone over the net. Dumb shits probably don't even know the real meaning of redneck or where the word originated from. Nice video, BTW. Have a good one.
