SIMPLY SWEETS - BANANA MUFFINS | バナナ・マフィン
Makes 6 muffins
INGREDIENTS:
Streusel
32g all purpose flour
16g brown sugar
1/4 tsp vanilla extract
1/4 tsp ground cinnamon
16 g cold butter
15g sliced or diced almond
Muffin
62g butter, soft
125g white sugar
1 large egg, whole
175g ripe bananas, mashed
112g all purpose flour
1/2 tsp baking soda
1/2 tsp salt
DIRECTIONS:
Preheat oven to 160℃
Grease and flour muffin pan OR line with cupcake baking papers
Streusel
1. Combine brown sugar and vanilla extract in bowl. Add cinnamon and almond slices, mix to combine. Add all flour and mix to combine.
2. Add pieces of cold butter and work into dry ingredients with your hands to make small pieces.
3. Cover with plastic wrap, refrigerate.
Muffins
1. Sift flour, baking soda and salt together into bowl, set aside.
2. Whip soft butter in large bowl until creamy. Add sugar and whisk well to combine. Add egg and whisk to combine.
3. Add mashed bananas to batter and use large rubber spatula to combine.
4. Add all flour and gently fold until just combined. DO NOT OVER MIX!
5. Spoon into muffin pan.
6. Sprinkle top of batter with streusel.
7. Bake at 160℃ for 15 minutes. Rotate and bake 5-10 minutes.
8. Remove from oven, test with skewer for doneness.
9. Set aside for 10 minutes in pan to cool. Remove muffins from pan and cool completely.
