I often make carrot, ginger and coriander soup with a little difference. I often add some bird's eye chili's (2 or 3 depending how hot you like it) when I am sofening the vegetables.
I find it adds some terrific flavour and a little punch to the soup. Serve with some wholemeal bread. It is extremely healthy, full of great vitamins and keeps you warm on this cold winter days. This of you (like me) that suffer from sinus problems may find the added chilli's help clear them nicely.

Mmm coconut milk.. most people dont put that.... also,. i wish they had coconut milk in half size cans\!!! they always have a the huge ones.

i eat gingers with honey
it tastes sorta like the chili oil mixed with the cashew cookies
Can this recipe also be done if you only have shredded bagged carrots?

Yes of course you can use anything you want.
The main rule in the kitchen is - there are no rules
My personal recommendation is to buy whole fresh ingredients and prepare them yourself - its a lot healthier and cheaper!! 8)
