Most RATs in fact provide hydraulic power, or both hydraulic and electrical power.
How much power the RAT can supply is carefully calculated, as you want to keep weight and drag to a minimum. So only enough power to supply aircraft systems critical to flight is generated.
Remember this is not 'free' energy. The RAT increases drag, and therefore reduces the amount of time the aircraft can glide.
I've lost count of how many times I have helped close that back up after someone had pulled the lever in the cockpit. Somebody parked a landrover underneath it during a car boot sale and it nearly got flattened.
