Its great they're exploring parts of each character that we wouldn't normally see (Pinkie who goes nuts when she feels abandoned, Rainbow Dash when she's nervous, etc.).
If they had put some indication that she was acting this way due to her not fully recovering from what happened with Discord (sorta like with Picard in 'Family' from Star Trek TNG, except more subtle), I'd certainly be able to buy that. But, as far as I can tell, there is no hint towards that being the case, so I'd have to file this under 'Wild Mass Guessing'.
@Charmolution Agreed, that and Pinkie's childlike and I could see how she could misinterpret her friends trying to surprise her as leaving her out, with Twilight she's mature and rational so having her think Celestia would take her away from Ponyville and send her to magic kindergarten was sort of a Flanderization (to use a tvtrope) of her usual studiousness and fear or failure, only to a really goofy extreme. I think that's why it didn't work as well for me.
Plus, Twilight is the calm, logical, sensible pony, yet here, she uses insane troll logic and completely overreacts. But with Pinkie, it was already established that she wasn't quite all there mentally, (just look at all the things wrong with her imagine spot in 'Ticket Master', for example), so her having a schizophrenic episode like that made sense with her. And like you said, it was easier to feel sorry for Pinkie.

I liked the whole sun and windmill thing and Spike pushing away the background too but TBH, Twilight creeped me out in this ep.
