How I chop garlic. First I smash it, then I chop it. I don't recommend using thin knives or really expensive knives for this process. The knife I am using is really thick, 5mm at the spine so really it's almost like a cleaver that's shaped like a chef knife. So unless you are using a cleaver or a really heavy/thick knife I wouldn't go slapping it on the board like I am doing.

What you can do is just place the garlic on the board, put the knife flat on top of it with the edge facing away from you and simply press down with your other hand to crush it. If you feel scared of using a knife this way or cutting yourself, simply use the flat side of a small kitchen mallet.

  • i have two shuns knives, but i found out it's too delicate to everyday tedious kitchen tasks. i am looking for a knife is rock solid, and crazy sharp to complete my kitchen tasks everyday. i am thinking about Global g2 knife. any suggestion?
