Another holiday means another holiday meal. I always pick the brain of Ray Venezia, our master butcher, when preparing a meal for guests, and this year I figured I would share it with you. This is a great piece of meat to feed a large party, is extremely cost effective, and will give you a spectacular presentation. By tieing the meat inside out the crown roast will cook better and preserve its natural juices. Crown Roast Cooking Instructions:
Preheat the oven to 375 degrees. Cooking time is 15 minutes for each pound of meat. (If you have a meat thermometer it should read 160 degrees.) You can also cover the tips of the bones with tin foil so they do not burn and add some stock to the bottom of the pan to make a nice gravy. After cooking, let the roast rest for about 10 minutes before serving.
