Perogie Dough:
2 cups flour
1/2 tsp salt
1/3 water, add more Tbs at a time till comes together as a dough
knead 5-10 minutes
wrap in plastic and let sit 10 minutes or more, the longer you let it sit, the easier to roll out :)

Filling:
2 Lrg Potatoes
1/2 cup cheddar
1/2 tsp salt
1/4 cup cream or milk
Mash as mash potatoes

Roll out dough, cut with 3 inch cookie cutter, or glass
fill each round with 1 tsp potato mash
crimp.

To cook:
Boil large pot of water, add a little salt to water
boil about 1.5 minutes, or until they float

If you wish to fry them fry in some butter

Serve with Sour cream, bacon bits, onion butter, green onions.

Fillings are to many to count, google perogie filling, you will amazed at what you can put inside, they can be savory or sweet. Enjoy!

    these look so good...i must try them... could the scraps be boiled as "noodles"? ... can perogie be deep fried? if so, do i boil them first???

  • @skybirdbird yes, the dough is essentially the same as noodles, so go ahead and boil them for noodles! Great idea!

    As for deep frying, yes you can, they do get quite crisp quickly so not for long! I dont have a deep fryer and dont have a ton of experience with deep frying, so test it out, and share with us all! :) And do NOT boil them first.

    Anyway,,, what I am trying to say,... is you don't need a lot of room to grow potatoes..

  • Growing Potatoes, I have grown them in my FLOWER beds.. and this year I am trying them in Crates, you get in stores. Like what milk or water comes in. I thought of this after I had already started one plant. So I slipped the crate carefully over the plant, and now I am able to "Hill" the potato plant. I never new you had to HILL them until I recently became a UTUBE junky. Anyway.. my theory with this is to just keep adding the crates and "hilling" the plants...

  • Green spots on potatoes are toxic and must be cut out. Egad I love pierogies. It means "boat." In Ghent, Belgium, I found a Ukrainian restaurant and I asked for these and got a pastry-like dish, not dumplings at all. Wow, it tasted good, I didn't care. In NYC I loved them boiled, not fried, with butter and onion sauce on top and sour cream on the side. Lots of good tips here, thank you! My pierogie source here in France dried up so now I have some idea how to make some myself.
