Recipe:
1/2 sm white onion, roughly chopped
1 clove garlic, smashed
Grated zest of 1 large lemon
1 tbsp fresh lemon juice
1 pkg (8 oz) fresh spinach, finely chopped
1/2 cup reduced fat mayonnaise
1/2 cup reduced fat sour cream
1/2 cup freshly grated Parmesan cheese, preferably Parmigiano-Reggiano
1 tsp salt (if using sea salt, only 1/2 tsp)
1/2 tsp ground pepper
Pita chips are best for dipping in this dip, but you an use what you prefer.
Dip can be prepared 1 day in advance. Just take it out 20 minutes before you serve it.
