@mauibuilt49er That's true. I believe this advice is aimed at the homebaker with basic tools. I would certainly be using a scraper and a turn table. Spatulas are too flexible for perfect perpendicular sides. (tongue-twister! lol)

..expert? this looks like how one of my beginner decorators would ice something... i dont think you should be able to call your selfs experts when your decorating like a beginner does. i would never try to ice the sides with a spatula like that! get a metal bench scraper like mauibuilt49er suggested in an earlier post. also a suggestion for people who want really smooth frosting with not a lot of fuss. italian buttercream is a must!
Honestly, you make it harder than it needs to be. Please people, a great tool to have is a scraper. A scraper will become your best friend when smoothing frosting. And QUICKER by the way! Waaaaaaaaaay Quicker than this video tutorial! This way when you put the fondant on, your cakes not lopsided!
