hi, could you tell me what key your harmonica is in? or does it even matter?

Its a D and it would matter when you are playing with a band matching the key with the key the band are playing in.

Do you exhale deeply after every draw? I find when playing this that my lungs get filled with air quickly. Does your breathing just become more natural with time and practice?

Yes in time you will develop breathing through your nose at intervals whilst playing eventually happening that quick it becomes second nature.
