Demonstrated at the 2008 International Food Machinery & Technology Exhibition, The Clean Fryer, now being sold by Water Fryer, is a fryer that uses the separation properties of water and oil to cut the amount of oil used to less than half that of conventional fryers. This fryer is different from ordinary fryers is that water is placed in the bottom and contamination from the oil is absorbed by that water. As a result, oil oxidation and degradation is reduced by more than half compared to conventional fryers. Water and oil are placed in the same tank and a cooling device is used to create a difference in temperature between the oil and water layers. The cooling device is also used to constantly maintain the temperature of the boundary between the water and oil at 55°C and thereby achieve a complete separation of water and oil. The cost for the 12 liter type fryer is 320,000 yen.

God me too. The fact that fish are swimming in the fryer itself just goes to show you how far ahead japanese people are just in the aspects of immagination and innovation.
