Sorry, but by using iron electrodes, your solution will mainly consist of FeSO4. Iron isn't noble enough for being anode, even Cu isn't because you want water to be oxidized to oxygen at the anode so you can get H+ ions.
You want this oxidation:
2 H2O -> O2 + 4 H(+) + 4 e(-) |E0 = +1,23V
but you get this oxidation:
Fe -> Fe(2+) + 2 e(-) |E0 = -0,44V
because for oxidation reactions, the reaction with the lower potential is the most likely to happen (reductions are the other way around).

@bla287 Thank you for the comment. Yes, sorry about that, but notice, this video was uploaded in 8.2.2010, what is nearly 2 years ago, when I knew shit about chemistry.
