Homemade Broccoli Cheese Soup
You'll need:
6qt stock pot
fresh, raw broccoli chopped up.
one small onion, diced
a few cloves of garlic (to taste) diced
one small jalapeno, diced (optional)
2-3TBSP butter for sauteing veggies
2QTS coconut milk (or any other milk/milk substitute of your preference)
32oz Velveeta Cheese
Saute, on medium heat, onions, garlic & jalapeno in butter till soft.
Add chopped broccoli, cover pot & allow to steam/cook over a medium-low heat for about 10-15 minutes or until broccoli is tender.
Add 1-2 cups milk & begin adding cubes of cheese, a few at a time & allow to melt. Stir constantly over medium heat. Once all cheese is added & melted, add rest of milk & allow to simmer over low heat 10-15minutes more.
