Don't know if this has been said before, but you should let the merengue/almond mixture rest for at least an hour, before baking. It'll ''harden up''. Then bake it at 155 degrees Celcius for about 12 minutes. Then keep them in the freezer. About 5 minutes before serving, take them out. The high amount of sugar in there will provide enough sustainability. Following this makes 100% sure you won't get any cracked macarons!
