    This looks like molecular gastronomy.

    I've had something similar, but infinitely less complicated. At a steakhouse and bar in Hong Kong I was served smoke infused whiskey, and the process of making it did indeed include live flames behind the bar. The combination of tastes was nothing short of mindblowing.
