http://www.inspectorgrape.com Risotto Nero (black rice) gets its name from the black color the rice acquires when cooked with its signature ingredient, squid ink. Its delicious with any crisp white wine but if in doubt always opt for something from the same region as the food. I think a Gavi from Piemonte will be perfect with this dish.

The onion looks like it was chopped by a child haha... Also by adding the cold stock you are continually cooling the entire dish, it should be on the adjacent hob simmering. Otherwise, good effort.
