Instead of a bread pan can I use a muffin pan? I don't have a bread pan, but I want to make banana-muffins..Will I have to change the cooking time?

When you are baking, you can use either a comercial egg substitute found at your grocery store, or you can replace it with 1/4 cup of applesauce or mashed banana plus 2 teaspoons of oil. For this recipe I would recomend adding the banana and oil ( duh! ) but the apple sauce works really well for other types of breads and things. Product can sometimes be a little bit denser (is that a word?) and more moist than with eggs, but still tastes pretty darn good!

could you please tell me what "shortening" is? Butter?

Shortening and butter are not the same but can be used interchangeably. Shortening is "Crisco" found near the cooking oils in the grocery store. Make sure your shortening doesn't have any transfatty acids in it for your health's sake. That's why I use Crisco shortening.

i'm a vegetarian, so is there a way to not use eggs?

I'm sure there is but I don't know what it would be. Check a vegetarian web site, I guess. You might look around the dairy section of the store to see if there's something. I'm sure some are allergic to eggs as well. I'll do some research on that.

yes its kind of like muffin but it has more of a banana taste to it.
