Because the seats sit in a recessed position on the side of the T-shape. If they add a middle seat the middle would be higher than the drivers seat which would impair rear view vision. That would not pass automotive standards. I hope they do take off well. Just drop the price and ad EV stations in most gas stations and work places. Not just for GM but all car manufactures need to step this up.
I don't see a reason why they can't add a back middle seat. The claim is that the "T" shape of the battery prevents the back middle seat. I didn't see anything that would prevent the back middle seat
