Catch Wrestler Billy Robinson taught Saku this technique. CatchWrestlers taught Kimura the Double Wrist lock.

This is called a "Double Wrist Lock" or DWL in Catch-as-Catch-Can Wrestling, Sakuraba's style. The DWL was practiced years before Judo was founded. The takedown is called a DWL Takedown (there are many variations of it - he's just showing one) where sit down while kicking your leg between his/tailbone, and simply roll back on top (or Cross-Body Ride) and complete the submission. He was being polite with the finish because (in CACC) you straddle the opponent's head to finish the submission.

Robert Drysdale does a similar sweep, but he finishes with a Juji-Gatame. It all goes back to Masahiko Kimura's old techniques. It's really interesting to see how they're still effective in this day and age. (:
