tempered chocolate, make sure the molds are polished really well with a clean cloth, never wash or scrub them. watch the chef.

  • Didn't the chef say not to use a knife on the mold? Then he uses one on it! Oh, I see...he's from the school of do as I say not as I do! LOL

    Seriously, When you are teaching you MUST led by EXAMPLE!

  • what i understood is that the minute the chocolate sets you can gently remove the gelatin and then you have a special chocolate construction with a coin print from the gelatin mold. i wish there was a second video so we could see how it comes out
