My second cooking show on how to make low carb comfort foods. Fauxtatoes are a great dish to have at Thanksgiving or for those who typically have to fight to get their veggies. A couple of my kids and my wife even make cameo appearances in this video. It's the least I can do for all the taste testing I make them endure as I try new recipes. My non-low-carbing family members even like this recipe as an alternative to starchy mashed potatoes.

Try this recipe; I think it'll be a hit with you as well!

Recipe:
1 Head Cauliflower
2.5 TBS Butter
1/3 cup Heavy Cream
1 Chicken Bouillon cube
1 tsp salt
White pepper to taste

Directions:
* Cook Cauliflower until fork tender. Drain well.

* Place cooked cauliflower and other ingredients (crush bouillon cube first) into the food processor. Run on high until consistency of mashed potatoes. You may need to scrape the sides of the bowl a couple times to prevent lumps.

Makes 6 Servings:

  • you carb-phobic lunatics really make me feel a great deal of pity for you. A high carb, low fat diet has enormous nutritional value and will make you lean, trim and healthy. Your ludicrous fear of carbohydrates, the human bodies preferred source of calories and energy, will in the long term, hurt no one but your own self.

  • @ConcreteRiver I am amazed the hypocrisy and mental gymnastics within the same post. At one point, you have ad hominem attacks about us avoiding carbs, but in the next sentence you advocate avoiding fat. As for hurting myself or energy after 7 years of fantastic annual physicals and blood work and running many marathons, my health has never been better, or I have more energy than ever before.

  • Ok I made it! Tastes just like cauliflower of course, but the fact that it really was like eating mashed potatoes, it really was nice!! Thanks for sharing this recipe! Oh & the food processor was a MUST to get the consistency right! xo

  • @mrsmommy81 I really think the chicken bouillon and white pepper helps mask or alter the cauliflower taste, but then again it's been so long since I have had the original, I am probably not the best judge. I just know my non-LCer inlaws specifically ask for this recipe instead of regular mashed potatoes at Thanksgiving. :-)

  • They were great and I felt like I was cheating. lol I tried doing Atkins like 9 years ago. I was doing pretty good, but this was back before I had a computer. Now it seems much easier with people like yourself and others putting all these recipes out there.I feel like I have a better chance of staying on it. Thanks again :)

  • @mrsmommy81 I know the frustration. I will tell you a good way to combat that is to make your own Chinese foods (faux fried rice or Teriyaki or Orange Chicken) or chips with dip. It might not be as easy as ordering takeout from the local Chinese place, but yours will taste just as good.

    In fact, Orange chicken sounds really good right now -- maybe I will make that this weekend too.

  • @bowulf Thanks for getting back to me so fast:) I will either make this tonight or tomorrow. I've had a really bad last couple of days. I've had to watch people eat cookies, Chinese food, chips, etc...all stuff I miss:( I really am missing carbs so much:(

  • @mrsmommy81 The nutrition at the end of my videos is always per serving. Essentially I take the total Calories, carbs, fat, etc. for the recipe and then divide by the number of servings I would expect to get out of the recipe.

  • Is the nutrition facts per serving, or for all 6 servings?
