During our foraging trip with Fresh Direct around Callander, Dick showed us how to identify and pick out Hogweed. Here at the Road Hole Restaurant we would recommend you cook hogweed as you would cook asparagus, blanched with a little butter and seasoning. Ideal for a fish dish.
