They're not being really failr with the instructor. This guy probably hasn't worked in a restaurant ina while because he's been running i s program, and he may have worked ina restaurant where they weren't fussy about details. Even some of the fanciest restaurants use microwaves and frozen food.

This is actually really dumb. When you take lessons at anything, the standard etiquette is to listen well and show that you can interpret and follow the directions, not do your own thing and try to upstage the instructor. Any teacher I know would have thrown him out. This is part of television's never-ending quest to turn you into a self-centered asshole.
