For many Italian families, Holy Saturday is also "Easter Pie Saturday" -- The single day in the year when Ham Pies or Pizza Gain are made. Ours are made with ham, dry sausage, eggs, and several different Italian cheeses. The ham and sausage are ground on Good Friday and everyone gets together early Saturday morning for about ten hours of pie making.
