Beamers are possible, but keep in mind that the view must move with the motion platform. 3 beamers with screens would become very big, and structurally difficult. One beamer on motion platform has been done, see forcedynamics website.

I use Ian Hopper's motion driver utility. google "buggies build for fun". Also my simprojects website (diy motion platform III) descibes lots of details.
