Sausage casings were traditionally made of animal intestines, though now usually synthetic. Usually, but not always. This guy is just explaining how sausages are made. It may have seemed strange or foreign to him but that is how one makes sausage, by shoving the meat, spices, and salt into the animal's intestine to preserve it longer.
