@o56kid sounds like you don't know much about fishing. Smaller fish such as perch or any pan fish can be cooked whole; however, when you got a fish this size, you'd want to cut up in pieces because there are lots of bones in ones like this. Plus how are you gonna fit it in your frying pan. Well, the grill but fish this big I'd rather cut up to enjoy every single chunks of meat. By the way, trout skin is extremely fishy.

@dookiekong007 It's called cutting the fish into steaks. A 30'' steelhead will make 5 good sized steaks. In the oven @ 400.
