@59phonebone Put it in at 250 and it won't boil over , put it in slow ! Gloves would be nice . For gods sake get it away from that structure . Having gloves wouldn't be nice .Meat Thermometer you have there isn't an instant read and that' what you need .... SLOW SLOW SLOW

Glad it turned out well for you.
Not so sure about the wood fence 18 inches away from the fryer, nor the overhanging tree branch 3 feet above the fryer (even if it was mostly green). At least the guests seemded to be away from the fryer.

I think you were lucky the oil temperature was lower that what it should have been. The combination of having that fryer right next to a wooden fence and not knowing what you were doing was a horrible, fiery accident waiting to happen.
On the plus side, there are far worse results out there on YouTube.
