2 Tbsp hot Hungarian paprika
1 Tsp olive oil
1 lb extra lean beef stew meat (beef round chunks)
1 (8 oz) packaged presliced mushrooms
2 cups diced green bell pepper
1 cup diced onion
1/2 cup dry red wine or less sodium beef broth
1 (8 oz) can no salt added tomato sauce
1 Tsp salt
1 (14 oz) can less-sodium beef broth
1/4 cup water
2 Tbsp all purpose flour
12 oz uncooked wide egg noodles
3 Tbsp reduced fat sour cream

1. Place paprika in a large skillit over medium high heat; cook 2 minutes or until fragrant, stirring constantly. Remove from pan, and set aside.

2. Heat oil in same pan over medium-high heat. Add beef, and cook 3 minutes or until browned, stirring occassionally. Add mushrooms, bell pepper and onions; saute 4 minutes. Add toasted paprika, red wine, tomato sauce and salt. Reduce heat to medium, and cook 6 minutes, stirring frequently.

3. Combine beef broth, water and flour, stirring with a whisk until smooth. Reduce heat to medium-low. Add flour mixture to pan; cook and cook 1 hour and 30 minutes or until slightly thick and beef is tender, stirring occassionally.

4. About 15 minutes before beef mixture is done, cook pasta according to the package directions, omitting salt and fat. Stir sour cream into beef mixture. Serve beef mixture over hot pasta

Yield 8 Servings (serving size; 1 cup pasta and 3/4 beef mixture)

  • Wow! Nice! Are they weight watchers specific or just ones that you like and then you figure out the points? Other than seasonal recipe books at check out lines I never even look - but I will be now! :D

  • @toocute2befat When you come over on Saturday I will show them... but they are Weight Watchers Specific and generally really easy to make meals and less time. This was the first time it took awhile to cook but still a simple recipe to follow. THere is a Asian Pork that is William's favorite. I will video that one next week because he is craving it

  • @toocute2befat I have been collecting them for years.. they are a bit hard to find but I find them at grocery stores when they publish them. Whenever I see them I grab them as fast as possible. I easily have over 100 recipes that I want to try.

  • Just wanted to say, I made this recipe on Sunday night with my wife. It turned out absolutely delicious! Not only was it good, but it's going to be filed away in my "vault" of fave recipes to make again. And I didn't even have the hot paprika (we couldn't find it). Even with regular, it was awesome. The wine and the seasonings and pepper/onion were just outstanding. I'm going to vlog about it soon and will post calories (for me, 4 servings and not 8). AsianChexMix, try this!
