Penne Alla Vodka! Step by step how to make a real vodka sauce for pasta alla vodka, in this case, penne alla vodka. I used this very method in restaurants, catering halls, delis and of course for family meals! Bacon can be used instead of pancetta if you so choose. Half and Half can be used instead of heavy cream for a less "creamy" sauce. Be sure to use a good quality vodka, Absolut, Grey Goose or Ketel 1 (unflavored) all work well! BE REALLY CAREFUL when burning off the alcohol, the FLAMES can get pretty high...Watch the curtains if you do it at home! Watch your face and other body parts!

  • Great vid man.... do you have to light the vodka on fire? I have a small kitchen with a range hood...

  • @HST40 No need to light it, it just speeds up the process. The idea is to burn off the alcohol, which can be simmered out, as well. Be careful with open flames though (especially a gas range), it could light itself!

    Eh, my only problem is sound is....have you watched any other cooking vids on youtube? the sound quality is so atrocious that I welcome the silence of this one haha - plus there's some awkward commentary out there.

  • Try a few slices of fresh mozzarella. Also sliced prosciutto comes out really good in it too.
