I think it's pronounced: sef-ee-eye

The "Cephei" is because the star is in the constellation Cepheus.

actually VY Canis Majouris is the largest known star & there could be stars out there even BIGGER than that.

Well, what if the planet is say.. bigger? or further out from the "sun"? I don't know, I'm just saying. No one knows :D

yeah, we can't measure their size if their to far away... there could be stars that are twice as big as VY Canis Majoris, right in front of us that we can't measure

We use the same technology to measure distance with our eyes as with our telescopes... we look at an object which is far away, from two different locations, and through it we determine how far the object is away and the size of it, this is called triangulation, and If the object is too far away then we can't measure the size.
