Kirk really was a martial artist. He was voted most dangerous man in Hollywood at one time. Wether or not that is true is debatable, but he could take care of himself. : )

He obviously slowed down his pounds or if he went full speed and full force, he could have really hurt the guy. Even the drop kick was gently executed. Star Trek the series wasn't known for a big budget - Even their uniforms were too small. After the first washing, they shrunk, but they were stuck using them anyway. Padding or safety equipment for the fighters and stuntmen would have been a luxury, so it was best to pull one's punches and kicks.
