  • I've probably watched 50 bbq rib competitions and nobody boils their ribs before hand. Boiling makes pork tough and chewy. I think that comes from the people who are afraid of under-cooked pork who want it precooked before it goes on the grill. If that's what you like then go for it and enjoy it, it doesn't affect me whatsoever.

  • Nicely done. You explained the process very well with excellent reasoning. I am lazy and don't always remove the membrane - just score it or leave it. It does trap moisture.

  • There are a million and one ways to do ribs, but your way is simple and very effective. I wholeheartedly agree with doing your own rub. Since I don't have a smoker, I bake my ribs at 275 degrees for 2 and half hours and then barbecue them for ten minutes. Works out pretty good too.
