@LehmannDaHero Have you ever taken rice straight out of a rice cooker, or a boiling pot, and tried to fry it? It's not the age of the rice that's important, you're right. However, age does lend credence to the dish in the sense that a grain of cooked rice left to open air will dehydrate, not clump to other grains, and be conducive to a fried rice dish; more so than a freshly cooked grain.
My point was that you're nitpicking at an arbitrary distinction.
