Home canning is a big part of many families food preservation tradition. A much older and less common technique is the process of Fermentation, traced back as far as 1500 BC.
Sandor Katz is an avid practitioner of this process, even gaining the nickname SandorKraut for his first fermented Sauerkraut venture. With 14-years experience, Katz proudly promotes the health benefits and amazing taste that come with fermenting foods and beverages.

  • @bogifokk Yes, seriously. Sauerkraut is All-American and if you watched the video he explains why. All the immigrant groups brought their own version and it has become a staple food over here since the very beginning. Here's a little history lesson to a Swede, the U.S. is made up of many different cultures not one. Much of the U.S. is made up of the best of Europe's people after they left to find a better life. That is why Sauerkraut and hot dogs, another item based on Europe is All-American.

  • The show starts out talking about home canning, but fermented kraut is not canned. It is alive. Canned food is dead. Sandor Katz is brilliant.
