Delicious side dish that will compliment your holiday meals.
Ingredients
2 - 3 medium sized butternut squash, peeled and cubed
8 tablespoons unsalted butter
1/4 cup light brown sugar, packed
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
Directions
Preheat oven to 400 degrees.
Cut off ends of butternut squash.
Cut squash in half, cross wise at the neck.
Cut the bottom piece in half and scoop out seeds.
Using a peeler or paring knife, peel the squash.
Cut the squash into 1 1/2 inch cubes. Cubes should be fairly large and uniform.
Place cubes onto a baking sheet.
Melt unsalted butter and let cool.
Pour melted butter over squash.
Sprinkle on light brown sugar, kosher salt and black pepper.
Using clean hands, toss mixture together so the squash is evenly coated.
Spread mixture out into a single layer.
Roast in the oven for about 45 - 55 minutes or until the squash is tender and the sauce caramelizes.
While squash is roasting, turn it a few times with a spatula to brown it evenly.
