Wired.com correspondent Alexis Madrigal visits a flavor tripping part in San Francisco. Participants are given a berry from a plant native to West Africa. The fruit contains a protein, miraculin, that sticks to the sweet receptors on your taste buds and sets them off if the pH is low enough. Since sour things are generally acidic, they often trigger unusual flavor perceptions.

  • I saw these berries presented on an newscast and the news caster said he couldn't tell any difference.
