Making Absinthe as a distilled spirit is an art as much as it is a science. The Esmeralda Distillery seeks to bring back the old tradition of small-batch distillation by using real whole herbs and botanicals distilled in un-aged Brandy in copper alembic stills. Alchemy, potions and the romance of distillation has been a long lost art, buried by the introduction of cheaper alcohol production methods including flavoring additives, synthetic coloring and a host of pretty packaging. In comparison, avoiding cutting-corners, studying alchemical distillation process, and seeking to bottle potions that redefine flavor using only basic elements has led to the return of this old world artistic endeavor. The "elixirs" of Esmeralda Distillery have been discovered and adored by some of the most established mixologists and prestigious cocktail havens throughout the Western Hemisphere.
