    Hi,

    in Germany we call it Grunkern (green grain) and it's "baked" in a special oven combined with beechwood smoke. We look for that olive green color, brown grains are low quality to us...

    at the staff canteen they make a soup out of it once a week.... god, that's one of the best soups ever! I would trade the best Schnitzel for that soup anytime!

    You can also make veggie burger pattys with green grain, they're good, but that

    soup really rocks! ;-)

    What an amazing grain! Have you made the burger pattys before? If so, can you point me in the direction of a recipe? Would like to try that.

    I hear you on the soup. The 1st time I had it (just last month), it was in a buttermilk soup I was served. So good!

    I searched HIGH AND LOW to find frekeh in the Wasington DC area-- a place called the mediterranean bakery sell it!

    It makes sense that they might carry it - and glad you found some. Do you have a favorite dish you make with it? I made a 'summer salad' of veggies and frikeh, and it was so good! I'd like to explore other possibilities with this grain. =)

    Wow - never heard of this processing of wheat! You can also get true smokiness from flaming eggplants. They can be speared on a toasting fork and smoked right over an open flame like a marshmallow. :) Scrape off the blackened skin and enjoy the smoky flavor after cooking as usual - makes a mean baba ganoush. Cheers to seasonal eating! I agree, I don't want cooked root veggies in the summer, but when the temperature plunges, I'm ready for them again.

    I found greenwheat freekeh @ whole Foods in Washington DC. They have both a wholegrain and cracked. The best part is...it's already clean! Just boil it and make fun recipes!
